The grapes are harvested by hand and quickly taken to the winery in small carts in order not to compromise the quality and reduce oxidisation to the minimum.
Careful vine management during the year together with optimum location of the vineyards guarantees the best possible quality of fruit.

Vinification

Fermentation takes place in temperature controlled stainless steel tanks at 28c for appx. 10 to 15 days, the process is checked daily by the oenologist in the laboratory.at the end of the fermentation the wine is allowed to rest for at least 5 months prior to bottling.

Characteristics

This wine has a robust structure with good fruit, medium acidity.
