“Do Nothing is a chillable, fruity light wine. A mix of red and white fruit was sourced from dry-farmed, own-rooted, organic vines dating back to the 70’s. We fermented wholecluster carbonically—sealing bunches in vats that were left outside for 30 days; experiencing the natural, diurnal fluctuations in temperature. We literally do nothing during this time. The fruit sits and ferments without any input from us. After pressing, 50% of the juice goes into stainless steel tanks and the remaining balance goes into old French oak barrels where it finishes fermentation over the next five months. The wine is bottled without fining or filtration. The aroma is explosively fruity and sweet, while the palate is light, bright, and rocky.” — Jim Fischer + Jenny Mosbacher, Fossil & Fawn
