
100% Pinot Noir
Winemaking Notes : Enderle and Moll take a more hands-off approach to winemaking than most of their neighbors who have transitioned to more modern methods and technology. Much of the fruit is foot-stomped, and they use a mixture of whole-cluster bunches and destemmed clusters. Punch downs are manual. The natural fermentation takes two to three weeks before the pressing with an old, horizontal screw press. They have a direct line on barrels from a small Burgundy estate called Domaine Dujac, which range from one to over five years of age. The wine matures for 12-15 months in these used barriques. Liaison is bottled neither fined nor filtered and with minimal sulfites.
